It’s been a long torrid Easter School Holidays here. Not a lot of training done and a little bit too much Gin consumed but we’ve survived through to another Term time again.

The best discovery by far of the past few weeks is these no bake flapjacks. I am a terrible cook, obsessive about following the recipe and have never yet had a cake rise so finding this ridiculously simple recipe for a snack that my children love and is a good healthy energy source for me was a little bit exciting.

I hate when people tell me recipes, I just like to eat the end result but turns out I like to write about them. The recipe was from the US so measurements are in cups (I know, cups! like, whatever). I religiously followed the recipe the first time around and then realised I could just use it for proportions and my own unit of measurement (a tablespoon) just so the consistency ended up about right. To be honest you kind of eye it in at the end when you are mixing in the oats anyway.

I’ve made it (I say made, but really you just mix it up) twice now and it worked both times, both children gobbled them up and it fuelled my fellow Tri-sista and I pre and post Triathlon a few weeks ago as well.

Recipe

1 cup (or your unit of measurement) of peanut butter

½ cup of runny honey

3 cups of rolled oats (I used porridge sachets, all I had and worked fine)

Melt the peanut butter and honey together in the microwave (or on the hob if you are a proper cook)

Then gradually mix the oats in until you have a good stodgy mixture.

spoon it onto a flat surface (I would give you measurements of the ideal one but really I just used a cake tin I could get my hands on), lined with baking sheet or foil and flatten it out. Then put it in the fridge for an hour or two.

Then break it apart either neatly with a knife or with your hands (like me) and feed it to the ravening hordes (and yourself).
